ABOUT THE AUTHOR/S

Graham Dodgshun was formerly Deputy Director of Williams Anglis Institute of TAFE in Victoria. He taught Hospitality subjects for many years and has owned and run a restaurant and a bakery.

Michel Peters is the Culinary Academic Directore for an International Culinary and Hospitality Education Institute. He was formerly an Education Manager and Teacher in TAFE NSW and a Chef Patron.

Sireesh Saxena is an Executive Chef with ITDC. Presently, he looks after catering to visiting Heads of States of various countries. He is also associated with facilitating catering college students with improvised culinary knowledge.
